Your account (plan) is whatever it is. Changing phones doesn't change the plan (though if the change is done by a Verizon rep, they may "upgrade" you to the current plan if you don't insist that you keep your old one). No new data plan is unlimited and you can't change back to unlimited once you leave it. So the bottom line is, once you get on the 5 GB plan, you are stuck with it.
